is our pleasure to bring to you a selection of heirloom potatoes from
Alison, Paul, Lucien and Roseanna LaCourse of Parkman, Maine. Located in
the foothills of Central Maine, the LaCourse family farm, home of The Maine
Potato Lady™, has been in operation for 20 years. Their 100-acre piece was
once part of a 560 acre farm that dates back to the 1600s. The delicious
seed potato offerings listed here come from the LaCourse family and several
other family farms.

Banana Fingerling
Tan skin with dark
yellow flesh. Matures earlier than most fingerlings with respectable yields
of 2”-3” tubers at 75 days. Steamed and tossed with butter and parsley,
these make a tasty late-summer dish. White flowers on medium spreading
plant.

French Fingerling
Though plumper than most, this potato (also known as Nosebag) is still
considered a fingerling. Radiant rose-red skin and deep yellow flesh with an
occasional red ring make this potato stand out. Creamy, smooth texture with
exceptional flavor lends itself well to salad with thinly-sliced red onions
and chunks of crisp cucumbers. Abundant, long, plump tubers seem to tumble
out of the earth. Tall plants with red veining fill the row.

Rose Finn Apple
Fingerling
Rose-blushed beige skin and deep yellow flesh. Though not as easy to grow as
Banana, this potato’s exquisite flavor and cooking qualities set it apart.
Tubers set near the surface, so hill well to avoid greening and frost
damage. Maintain fertility and water carefully. Matures mid- to late season.
A medium-spreading plant.

Purple Viking
Truly
a beautiful potato, with deep purple skin dappled with pink splashes and
stripes. Bright white and creamy-good, the flesh bakes or mashes perfectly.
This variety produces what we call “lunkers:” large oversize potatoes, so
plant close (8”-10”) to control size.

German Butterball
Alison’s favorite potato! A round to oblong tuber with lightly netted
golden skin that wraps around deep yellow flesh. Slightly mealy, this beauty
is superb for everything – frying, baking, mashing, soups – you name it.
Resistant to scab and viruses; some field resistance to late blight, but
susceptible to rhizoctonia. Large upright vigorous plant with white
blossoms.

Green Mountain
Famous for its marvelous flavor and exceptional baking qualities. An
heirloom released in 1885, bred in the Green Mountains of Vermont. Produces
a high yield of light tan-skinned, white-fleshed tubers that store
exceedingly well. Resistant to verticillium, blackleg, and fusarium storage
rot, but susceptible to scab and viruses. Large spreading plant with big,
white flowers.

Irish Cobbler
Believed to have been discovered by an Irish shoemaker in the late 1800s,
Cobbler has round, golf-ball size, buff-skinned tubers with white flesh.
Early maturing and exceptional eating qualities keep this heirloom variety
in the seed trade. Resistant to blackleg and fusarium storage rot; immune to
wart. Medium-spreading plant with lilac, white-tipped flowers.
